Authentic Flavor Mexican Chicken Soup
This Mexican Chicken Soup recipe was inspired by a weekend vacation to Lexington, Kentucky. In addition to all of the sites and famous horse farms, we attended a small Latin Festival in downtown Lexington.
The street was full of food vendors each offering a taste of their original country flavors. We tasted an authentic flavor that led us on a continual journey to duplicate it.
Surprisingly, this soup made with Pampered Chef seasonings is so deliciously close!
Mexican Chicken Soup Main Ingredients
- 2 Medium Size Organic Chicken Breasts. Approx. 12 oz.
- 2 Cans 14.5 oz. of Organic Tomatoes.
- 2 Cans 15 oz. Organic Black Beans.
- 2 Chicken Bouillon Packets. Try to find sodium free.
- 1 can 15 oz. Organic Corn.
- 1 cup Organic Brown Rice.

Pick some of your favorite toppings.
- Tortillas
- Quesadillas
- Corn Chips
- Grated Cheese
- Sour Cream
- Avocado/Guacamole
Mexican Chicken Soup Instructions
1. Place all of the ingredients in the Pampered Chef Deluxe Multi Cooker and stir.
I like to drain and rinse canned vegetables because it will reduce some of the sodium content.
2. Put the lid on your Deluxe Multi Cooker and and twist to lock. turn the dial to the Poultry setting (15 minutes). Push dial to start.
If you are starting with frozen chicken you should adjust the time to 30 minutes.
3. When the time is up you can release steam immediately, or allow it to warm unopened until you are ready to serve.
4. When the pressure has been released, remove the lid carefully. Remove the chicken from the pot and place it in a bowl and check the internal temperature at 165 F.
Then using the Pampered Chef Salad Choppers, chop it into bite-sized pieces. (You can also cut it up or use 2 forks to separate it.)
Return the Chicken to the cooker and stir well.
5. Dish it up!
Add any desired toppings such as sour cream, grated cheese, or avocado. (These will change the nutrition Information.)

Mexican Chicken Soup Variations
1. Fresh Ingredients Option.
As written, this is my go to recipe when I'm in a hurry. However, when I have more time, I love to use fresh ingredients. I cook dried black beans, stew my own tomatoes and use fresh corn or corn that I have frozen from my garden.
No matter what variation I choose, I always use organic options when possible. (Check out my article on starting a healthier lifestyle.)
2. Pressure Cooker.
If you do not have a Pampered Chef Deluxe Multi Cooker, you can make Mexican Chicken Soup in any type of pressure cooker. If your appliance has a Poultry setting use that, if not, set the time for 15 minutes for thawed chicken and 30 minutes for frozen. Follow the directions above.
3. Stove top.
Mexican Chicken Soup can easily be made on the stove top. You will have to start with pre-cooked chicken. (I will sometimes use a rotiserrie chicken. This will change the nutrition information.) After I debone and remove the skin from the chicken, I place all the ingredients in my Pampered Chef Enamaled Cast Iron Dutch Oven. Heat ingredients to almost boiling, then simmer at least 20 minutes. (The more times soup is warmed up, the better the flavor!)
4. Microwave.
To make Mexican Chicken Soup in the microwave, place raw chicken in the Pampered Chef Rockcrok Dutch Oven. Place in microwave for 10 to 15 minutes or until chicken reaches an internal temperature of 165F. Remove from microwave and chop with salad choppers. Place remaining ingredients in the Dutch Oven and return to microwave. Cook for 10 minutes or until heated through, stirring every 5 minutes. Once heated thoroughly, allow to sit for @ 10 minutes to allow the flavor of the seasoning to fully develop. You can also place the Rockcrok Dutch Oven in the it's slow cooker base to keep warm for as long as neccesary.
Benefits of Cooking Mexican Chicken Soup in a Pressure Cooker
Because pressure cookers like the Pampered Chef Deluxe Multi Cooker are sealed, they maintain high internal pressure.
This allows for a much higher cooking temperature causing the soup ingredients to cook faster.
Also because of the tight seal, there is no escaping steam during cooking which maintains nutrients and flavor.
